About This Spicy Rigatoni Vodka
North Italia is a casual Italian restaurant chain, and its Spicy Rigatoni Vodka is one of its best-known pasta dishes. The menu describes it as rigatoni with Italian sausage, crispy pancetta, shaved garlic, torn basil, and grana padano. It also appeared in a chef-panel roundup of restaurant chains with standout vodka pasta, where the heat was praised for cutting through the richness of the cream.
This is a home version inspired by that dish, not the restaurant’s own recipe. It follows the method in the My Forking Life video below: spicy Italian sausage, Calabrian chili peppers, tomato paste, vodka, and cream. The tomato paste is cooked until it darkens, which gives the sauce a deep, sweet tomato flavor. The vodka sharpens the flavors, the cream rounds out the heat, and rigatoni’s ridges and wide tubes hold the sauce.
Here at Brenda Gantt Recipe we mostly cook Southern comfort food, but a creamy pasta like this fits the same idea: simple ingredients, big flavor, and a dinner the whole table asks for again. Browse the full recipe collection or read more in our stories and news.

Instructions
- Cook the rigatoni. Cook the rigatoni in generously salted boiling water until al dente. Reserve ½ cup of the pasta water, then drain.
- Brown the sausage. In a large, deep skillet over medium-high heat, brown the sausage, breaking it into small crumbles, for 6 to 8 minutes. Transfer it to a plate and leave about 1 tablespoon of the drippings in the pan.
- Build the sauce base. Melt the butter in the skillet over medium heat. Cook the onion for 3 to 4 minutes until soft. Stir in the Calabrian chili peppers and tomato paste and cook for 2 to 3 minutes, until the paste darkens slightly.
- Add the vodka. Remove the pan from the heat before pouring in the vodka. Return to the heat and simmer for 2 to 3 minutes until mostly reduced.
- Add the cream. Reduce the heat to low and whisk in the cream until smooth. Simmer gently for 3 to 4 minutes, then stir the sausage back in.
- Toss with the pasta. Add the rigatoni and ¼ cup pasta water. Toss over low heat for 1 to 2 minutes, adding more pasta water a splash at a time until the sauce is silky and clings to the pasta. Stir in the Parmesan and season with salt.
- Serve. Serve hot, topped with torn fresh basil and extra Parmesan.

Good to Know
Protein-Packed
Sausage, cheese, and cream provide protein, which helps keep you full after dinner.
Cooked Tomatoes
Tomato paste is a concentrated source of lycopene, an antioxidant found in cooked tomatoes.
Calcium
Parmesan and cream contribute calcium, which supports bone health.
A Rich Treat
This is an indulgent pasta. Serve a modest portion with a green salad or vegetable side to balance the meal.
What to Avoid
Preparation Mistakes
- Don’t add cold cream to a hot pan. Use room-temperature cream and lower the heat so the sauce stays smooth.
- Don’t pour vodka over a flame. Take the pan off the heat first, then return it to simmer.
- Don’t discard the pasta water. The starchy water is what makes the sauce silky and helps it cling.
- Don’t overcook the pasta. It keeps cooking in the sauce, so stop at al dente.
Storage Mistakes
- Don’t reheat on high. Cream sauces can separate. Reheat gently with a splash of liquid.
- Don’t leave it out. Refrigerate leftovers within 2 hours of cooking.
Dietary Considerations
- Contains Dairy (cream, butter, cheese)
- Contains Gluten (pasta)
- Contains Pork (sausage)
- Contains Alcohol (vodka)
- Spicy
Pro Tips for the Best Spicy Rigatoni Vodka
- Darken the tomato paste. Cooking it for a couple of minutes removes the raw taste and adds sweetness.
- Add pancetta for a closer match. North Italia’s version uses crispy pancetta, so crisp 2 to 3 ounces first and sprinkle it on top.
- Control the heat. Calabrian chilis are strong. Start with 1 teaspoon, taste, and add more.
- Add pasta water slowly. A splash at a time gets you a glossy sauce without thinning it out.
- Use fresh basil and good Parmesan. Both go on at the end for the best flavor.

Ingredient Substitutions
| Ingredient | Swap | Notes |
|---|---|---|
| Vodka | Vegetable broth | Alcohol-free. The flavor is slightly less sharp. |
| Spicy Italian sausage | Mild Italian sausage | Keeps the flavor with less heat. |
| Calabrian chili peppers | Crushed red pepper flakes | Start with ½ to 1 teaspoon and add with the tomato paste. |
| Heavy cream | Half-and-half | Lighter and thinner. Simmer gently to avoid splitting. |
| Rigatoni | Penne or paccheri | Any tubular or ridged pasta holds the sauce well. |
| Parmesan | Grana Padano or pecorino | Grana Padano is what North Italia’s menu uses. |
Storage & Reheating
Refrigerator
Cool, then store in an airtight container for 3 to 4 days.
Freezer
Not ideal, since cream sauces can separate when thawed. If you freeze it, use within 2 months, thaw overnight in the fridge, and reheat gently.
Reheating
Warm in a skillet over low heat with a splash of water, milk, or cream. Microwave single servings in short bursts, stirring between.
Frequently Asked Questions
No. North Italia does not publish its recipe. This is a home version inspired by the restaurant’s spicy rigatoni vodka, which its menu describes as rigatoni with Italian sausage, crispy pancetta, shaved garlic, basil, and grana padano. For a closer match, add crisp pancetta and a little sliced garlic.
Yes. Swap the vodka for vegetable broth or extra pasta water. The flavor will be slightly less sharp, but the sauce will still be creamy and spicy.
Not completely. Simmering reduces the alcohol, but some remains. If you need to avoid alcohol entirely, use vegetable broth instead.
Start with 1/2 to 1 teaspoon of crushed red pepper flakes, add them with the tomato paste so they bloom in the heat, then taste and add more. Calabrian chilis also add a fruity flavor that flakes do not.
Use mild Italian sausage, cut the Calabrian chilis to 1 teaspoon, and finish with a little extra cream or Parmesan. Add more chili at the table for anyone who wants heat.
Refrigerate in an airtight container for 3 to 4 days. Reheat gently in a skillet over low heat with a splash of water, milk, or cream to loosen the sauce. Avoid high heat, which can make cream sauces separate.
